Ingredients
1 Large Cauliflower
1 Large Broccoli
2 Tbsp Unsalted Butter
3 Tbsp Flour
2 Cups Hot Milk
1 Cup White Cheese Shredded (Gruyere, White Cheddar or Monterey Jack)
1/2 Cup Parmesan Grated
1 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Nutmeg
- Bread Crumb Topping
2 Tbsp Unsalted Butter
1/3 Cup Bread Crumbs or Panko
Directions
- Preheat oven to 375 degrees F
- Cut cauliflower and broccoli into florets. Cook in a pot of boiling water for 5 minutes until tender but firm. Drain well.
- Melt 2 Tbsp of butter in sauce pan over medium low heat. Add flour and whisk for a couple minutes until golden. Slowly add hot milk (1/2 cup at a time) and whisk until it comes to a boil. Continue to whisk until mixture thickens. Turn off the heat. Add salt, pepper, nutmeg, white cheese and parmesan. Stir until cheese is fully melted.
- Pour enough of the cheese sauce into a 8×11 pan to coat the bottom. Add the broccoli and cauliflower to the dish. Cover the vegetables with the rest of the cheese sauce.
- Add the bread crumbs on top and drizzle 2 Tbsp melted butter over the gratin. Bake for 25-30 minutes.
- Prep Ahead Instructions. Complete steps 2-4. Chill overnight. Preheat oven and bake 15 minutes. Add step 5. Bake 20-25 minutes until gratin is hot and bread crumbs are toasted.
