Pulled pork is super easy in an Instant Pot. Cooks in a little over an hour.

Ingredients

  • 3 lbs Pork Butt Roast or Shoulder

  • 1 Yellow Onion, Chopped

  • 2 Tbsp Olive Oil

  • 1 1/2 Cups Chicken Broth

  • 1/3 Cup Apple Cider Vinegar

  • 2 Cups Barbecue Sause, Divided

  • Spice Blend
  • 1 Tbsp Brown Sugar, Packed

  • 2 tsp Each: Paprika, Garlic Powder, Onion Powder

  • 1 tsp Each: Salt & Pepper

  • 1/2 tsp Cumin

  • 1/4 tsp Cayenne Pepper (Optional)

Directions

  • Cut Pork into 3 inch cubes. Mix spices together and add to cubed pork.
  • Turn on Instant Pot to the Sauté setting. Add oil and onions. Cook until onions are soft and have some color. Add small portions of cubed pork and brown the outside for a couple minutes. Set each batch on a plate until all the pork has been browned.
  • Turn off the Instant Pot. Add 1/2 cup of chicken broth and deglaze the bottom of the pot with a wooden spoon. Remove all burnt bits or you may get an error while pressure cooking.
  • Add the rest of the chicken broth, BBQ sauce, and apple cider vinegar. Stir together. Add pork and any liquids from the plate. The pork should be almost completely covered by the broth mixture. Add more chicken broth if needed to submerge pork cubes.
  • Cook on manual high pressure for 40 minutes. Once cooking time is up, unplug and natural pressure release for 10 minutes. Quick release the rest of the pressure.
  • Shred pork by hand or with stand mixer. Add 1 or more cups of BBQ sauce to taste.
