Hawaiian Pineapple Meatballs

Ingredients
30 Frozen Meatballs
1 Can Pineapple Chunks (20 oz)
1 Red Bell Pepper
1 Yellow Bell Pepper
1 Sweet Yellow Onion
1/2 Cup Packed Brown Sugar
3 Tbsp Apple Cider Vinegar
1 Tbsp Soy Sauce
3 Tbsp Corn Starch
1/2 Cup Water
- Serving
2 Cups Uncooked Rice
Directions
- Cook 30 Frozen Meatballs in the oven using the instructions on the package.
- Cut Peppers and Onion into 1 inch strips. Sauté with olive oil in large sauce pan oven medium heat. Add salt and pepper to taste. Once the peppers and onions are soft turn the pan to medium-low heat.
- Add Pineapples with juice, Brown Sugar, Apple Cider Vinegar and Soy Sauce to the pan and bring everything to a simmer.
- Mix Corn Starch and Water in a separate container then slowly mix into pan. Add until the sauce thickens.
- Add cooked Meatballs to pan and stir everything together.
- Serve over your choice of cooked rice
