Homemade scalloped potatoes provide a great alternative to mashed potatoes. Bring this to the next family gathering.

Ingredients

  • 3 lbs Potatoes (Red or Gold)

  • 1 Yellow Onion, Diced

  • 2 Cloves Garlic, Minced

  • 4 Tbsp Butter

  • 1/4 Cup Flour

  • 2 Cup Hot Milk

  • 1 Cup Chicken Broth

  • 1/2 tsp Salt

  • 1/4 tsp Pepper

Directions

  • Preheat oven to 350 degrees F
  • Slice potatoes 1/4 inch thick with knife or mandoline. Set aside.
  • In a large sauce pan, melt butter over medium low heat with onions and garlic. Cook until onion is softened, about 3 minutes. Add flour and cook for a couple of minutes until golden brown.
  • Reduce heat to low. Slowly whisk in milk and broth (1/2 cup at a time). Whisk mixture until thick and smooth. Add salt and pepper. Bring to a boil over medium heat while continuing to whisk for 1 minute.
  • Grease a 9×13 baking dish. Place 1/3 of the potatoes in the bottom and season with salt and pepper. Add 1/3 of the cream sauce over top. Repeat layers ending with cream sauce. Cover and bake for 45 minutes.
  • Uncover and bake for an additional 35-45 minutes or until potatoes are tender. Broil for 3-5 minutes until golden brown on top. Rest for 15 minutes before serving.

Ingredients

  • Spice Blend
  • 2 Tbsp Chili Powder

  • 1 1/4 tsp Salt

  • 1 tsp Each: Garlic Powder, Ground Cumin, Brown Sugar

  • 1/2 tsp Each: Smoked Paprika, Onion Powder, Dried Oregano

  • 1/4 tsp Cayenne Pepper

  • Pork
  • 1.5 lbs Pork Tenderloin

  • 1 Yellow Onion, Diced

  • 2oz Mild Chopped Green Chiles

  • 1 Tbsp Apple Cider Vinegar

  • 1 Tbsp Lime Juice

Directions

  • Cut Pork Tenderloin into 1/4 inch cubes. Mix spices together and add to cubed pork.
  • In a large cast-iron pan or on Blackstone grill. Sauté diced onions in olive oil. Add more oil and cubed pork when the onions are cooked through. Cook pork 3-5 minutes to 145 degrees F. When pork is almost done stir in green chiles, lime juice, vinegar.

Tangy sweet-and-sour meatballs with peppers and pineapples. Serve on top of rice.

Ingredients

  • 30 Frozen Meatballs

  • 1 Can Pineapple Chunks (20 oz)

  • 1 Red Bell Pepper

  • 1 Yellow Bell Pepper

  • 1 Sweet Yellow Onion

  • 1/2 Cup Packed Brown Sugar

  • 3 Tbsp Apple Cider Vinegar

  • 1 Tbsp Soy Sauce

  • 3 Tbsp Corn Starch

  • 1/2 Cup Water

  • Serving
  • 2 Cups Uncooked Rice

Directions

  • Cook 30 Frozen Meatballs in the oven using the instructions on the package.
  • Cut Peppers and Onion into 1 inch strips. Sauté with olive oil in large sauce pan oven medium heat. Add salt and pepper to taste. Once the peppers and onions are soft turn the pan to medium-low heat.
  • Add Pineapples with juice, Brown Sugar, Apple Cider Vinegar and Soy Sauce to the pan and bring everything to a simmer.
  • Mix Corn Starch and Water in a separate container then slowly mix into pan. Add until the sauce thickens.
  • Add cooked Meatballs to pan and stir everything together.
  • Serve over your choice of cooked rice
